Can you substitute monterey jack cheese with mozzarella cheese?

You can but Monterey Jack undictincted flavor compared to mozzarella. That is why Monterey Jack is usually blended with another cheese like colbly to make colbly jack cheese. It is also blended with jalape?o peppers to make pepper jack cheese. So in my opinion I wouldn't substitute them because the flavor of just monterey jack lane is very different than mozzarella.

Why can't kefir be strained with a metal strainer?

Because kefir is a cultured milk product and is acidic in nature, you should not use a metal strainer to filter out the clumps because the acid will dissolve some of the metal and make the kefir taste metallic. Other than that, it will not harm you or the kefir, just alter its taste.

Why does Swiss cheese have holes in it?

Cheese (all cheese that is) is made by adding bacteria to milk, which produces lactic acid and helps give the cheese its taste. One specific bacteria added to Swiss cheese called Propionibacterium shermani produces carbon dioxide. Due to the density of the cheese, the carbon dioxide forms bubbles, which get larger and eventually burst, leaving the trademark holes. More recent research suggests that these bubbles form around microscopic debris in the milk, which compromises the structure of the cheese in those spots. Swiss cheese has gotten less holey over the years, and some scientists credit that to cleaner modern milking methods—fewer particles means fewer holes. Cheesemakers call these holes "eyes" and can control their size by adjusting the temperature, acidity, and curing time of the cheese.

Because dairy products contain bacteria, if your are taking anti-biotics it can effect the performance of the drug. Or if its just an up set stomach milk etc can curdle in the stomach acid and make you feel worse.

Yes, I believe it is, for although it could belong in the sweets part of the food pyramid, it mainly consists of milk, which is a dairy product. Also, think of it this way: don't people qualify ice cream as a dairy product? To me, Miracle Whip is not too far behind. Miracle whip is sweetened mayonaise. It doesn't have any milk in it. It's eggs, oil, sugar, and usuall some lemon juice.
